WE LOVE OUR PORK! Our Pork undergoes the same five step grilling process we use on the beef. We use all kinds of cuts of pork. From Boston Butt to Picnic Shoulders to Boneless Chunks, all are marinated in our special dry rub, grilled over select apple, hickory and hardwoods ow and slow to smoke in flavor….
Sweet Hickory Pork: This Big Fat Daddy’s Pork BBQ comes to you topped with optional Big Fat Daddy’s home made Cajun Cole slaw and sweet hickory sauce. The sweet hickory pork compliments the heat in the slaw and makes a “flavor explosion” in your mouth. For those of you who think pork is only vinegar based, you will be surprised at our flavor. This is our most popular on the road and what we are known for. Pulled and chopped until it falls off the bone, you won’t want to leave the fair without getting some of these.
MEMPHIS STYLE: We also do a Carolina or Memphis Style vinegar based barbecue sandwich for select events . Vinegar based barbecue is more popular down south and in the southwest. This is not particular as popular to our fan base. We love it just the same, but 9/10 people want to try our Sweet hickory.
