Over 60 Publications later, our beef is sitll the best around. Find out why and how we do this so you can “bedazzle” your friends and family at home. In this basic class you will learn all about dry rubbing, cooking and slicing pit beef and the condiments used for it. Sure, you can read all about it, but doing it with Big Fat Daddy himself may be a bit more interesting for you.

Overview of Class
In this three hour class you will learn everything about making the best pit beef at home for your family or friends, and making dry rubs. This will be held at the Big Fat Daddy’s compound in Manchester, PA. This will be an informal setting in a small class gathering limited to ten people. All supplies are provided. Note: This is not the same as competition cooking, but you can apply some of what you learned here to your competition brisket!In a small class setting, you will learn from start to finish how to prepare, trim, dry rub marinate and and serve pit beef at your next party or event! You will learn how to build the prettiest party tray to impress your friends! Review grilling methods, slicing, tips, tricks and what are the best cuts to use. All your supplies are covered! Wayne will answer all your questions and you will sample all the meats you’ve cooked. You are able to take pictures, but no recording devices please. You may take notes for your personal use.
Wayne start with a meet and greet , snacks, coffee, drinks, and personal tour of the Wall of Fame. Wayne will explain what he does and the basics of what you will learn.
Firing up the Pits
You will be firing up the pits early on! Discuss wood, and what to use.
You will then go into the kitchen and practice dry rubbing and marinating some meat.
You will grill the meat you’ve rubbed from start to finish, learning how and when to cut and slice it. You will discuss some pit beef do’s and don’ts.
Learning Time While the Meat is Cooking
Here is where you will learn different cuts of meat. You will learn how to trim the meat and how to marinate it.
You will be able to take notes and get recipes of three variations of dry rub.
You will make a dry rub from start to finish.
You will learn how to use fruit marinade on your beef for a different flavor.
You will make the fixings for your sandwich and make our signature horsey sauce.
We will show you how to make the best au’ jus for your beef.
Discuss Different Cuts and Grass Fed Versus Grain Fed
During this time there will be a show and tell about grass fed versus grain fed.
Slice and Savor LUNCH TIME
You will slice and savor the pit beef building the best pit beef sandwich ever.
We will build a party tray from start to finish with garnish to impress your friends at your next social event.
You will get a certificate of your graduation as a real “Pitmaster”. When you complete the class you will take home a baggie of leftovers, a Pit Crew tshirt, and some of the rub you’ve made.
