Big Fat Daddy’s was originally famous for our “pit beef” which was marinated in the famous “dry rub seasoning” . This is still the signature style thirty years later. Wayne’s select fresh chunks of beef which undergo a five step grilling process before they make it on your mouth. Different cuts are used, often bottom round slabs with brisket attached, sometimes top round, or brisket itself.

We strive for grass fed, Angus, or organic when available. We can’t tell you the top secret grilling process, but it starts with trimming and dry rub marinade process. It ends being grilled over a hot pit with select woods, and melting in your mouth.
Classic Pit Beef is thin sliced and medium rare.
BIG FAT DADDY’S FAMOUS BALTIMORE PIT BEEF: Large hunks of beef, generally crispy on the outside and rare inside. The beef chunks are grilled at high temps for a good bark yet moist inside due to our special marination and grilling process. Sliced thin and piled high, just add horsey sauce and white onions, and a bit of BBQ on a kaiser roll. So good.
Originally known for the thin sliced pit beef, we now do a Texas Style Beef a bit thicker . Almost the same in flavor, this beef is sliced and grilled to well done, soaking in au’ jus for use on your Sub, Cheesesteak, or as a Beef BBQ, with a touch of our signature BBQ Sauce. This gives a smokey, hickory flavor to any dish and is so divine.
ROAST BEEF IN AU’JUS : We slice our hunks thin and simmer them in Wayne’s special Au’ Jus. Add this on a sub roll and it melts in your mouth.
COMPETITION STYLE TEXAS BRISKET: The special Brisket end of the slab which we do moist and meaty melts in your mouth full of flavor yet with a purdy pink smoke ring! Toasty bark on the outside gives it a delicious flavor! Wayne loves slow smoking a brisket at Corporate Catering events or for your special party!

BRISKET : At Big Fat Daddy’s we love the brisket as much as the next guy. Wayne loves to prepare his brisket with love, first it undergoes the dry rub marination process and is also often injected. He cooks this on a smoker, low and slow. It comes out moist, loaded with flavor and a gorgeous smoke ring. It’s generally served with or without barbecue sauce.
